I haven’t been in the kitchen much lately as work has just been flat out and meals have just been simple and nothing worthy of posting. I had a day off with my daughter today and I really love being able to give them healthy snacks after school that actually fills their tummies and is healthy at the same time. The best bit was being short of time it didn’t take long to whip up and get in the oven.
I found the recipe on the Taste website but modified it slightly to add a few more ingredients. The kids loved them and I will be making another batch next week. Let me know what you think!
Healthy Banana, Apricot and Date Oat Bars
3 large ripe bananas
3 cups of traditional rolled oats
1/4 cup finely chopped dried dates
1/4 cup finely chopped dried apricots
1/4 cup slivered almonds
1 teaspoon ground cinnamon
1 1/2 teaspoons vanilla extract
I added to this recipe 1/4 cup shredded coconut and 1/4 cup chopped dark chocolate baking chips
Preheat the oven to 180 degrees celsius or 160 fan forced. I greased a 20cm x 20cm square tin or if you have a slice tin use that. Line with baking paper and have the paper extend over the sides.
Mash the banana until smooth. Add in your oats, dates, apricots, almonds, chocolate, coconut, cinnamon and vanilla. Stir well until combined. Spoon into prepared pan. Using the back of the spoon, press evenly into the pan. Bake for 30 to 35 minutes or until golden. Cool Completely and cut into bars. My batch made 17 bars.
