I am a huge fan of Banana bread, toasted with a small lashing of butter. So delicious. So when I came across this recipe for Banana, Raspberry and Coconut bread by the fabulous duo Mums in Real Life from Perth, I knew it would be a winner. This has such a nice twist to it due to the coconut and then raspberries are just delicious through the bread. I really suggest you try it and I would love to know what you think!
Banana, Raspberry and Coconut Bread
Go ahead and preheat the oven to 180°C
Ingredients:
1 cup plain flour
1/2 cup self-raising flour
1 cup brown sugar
1 cup coconut flakes ( I added a little more!)
1 teaspoon vanilla bean paste
125g butter – melted and cooled
2 eggs – whisked
3 ripe bananas – mash them up nice and good!
2 tbs raspberry jam
Now is the time to grease and line the base and side of a loaf pan with baking paper.
Throw and mix the flour, sugar and coconut in a large bowl. Whisk in butter, vanilla, mashed banana and eggs to flour mix.
Spoon into prepared pan and dollop raspberry jam on the top swirling around.
Bake for 45-50 mins, keep a watch on it as I like the bananas to be a little bit soft personally so tend to cook it a little less than this.
Cool in the pan for a good 20 minutes then turn out onto a wire rack.
