I have been wanting to bake better options for my kids and then at least I know what goes into their tummies. These chewy homemade Muesli bars were discovered over at Not Another Slippery Dip, another amazing blogger and mum that I have found. Michaela juggles 3 kids with a fourth on the way and writes about all the ups and downs of parenting. She also has some great recipes on her site and I found this one just as I was wanting to start making muesli bars. The kids thought they were delicious and husband and I ended up taking them to work too. Full of nuts and healthy good stuff, they were satisfying and very filling.
I added into my recipe so Goji Berries as well as Cacao Nibs instead of the chocolate chips to give it a nice chocolate flavour too. I also didn’t have any rice bubbles in the cupboard so missed out on those but want to try the recipe again with rice bubbles.
Ingredients:
1 2/3 cup of Rolled Oats or your favourite muesli
1 cup of Rice Bubbles
1/3 cup Plain Flour
1/2 cup Coconut
1/2 teaspoon Salt
2/3 cup of Brown Sugar
1 teaspoon Vanilla
1/2 cup Melted Butter
1/2 cup Peanut Butter
1/2 Cup of Honey (or rice malt syrup)
1 cup Seed and Nut Trail Mix
1/2 cup Cranberries, Sultanas or Other Dried Fruit
1/2 cup Chocolate Chips
Melted Chocolate for Drizzling on top
Method:
- Preheat the oven to 170 degrees Celcius (160 if fan forced)
- Line a rectangular tin with baking paper
- Melt the butter, peanut butter and honey in a large saucepan on the stove
- Add in the salt, cinnamon, brown sugar and vanilla and mix until the sugar has dissolved.
- Add the rolled oats, flour, coconut, see and nut trail mix and dried fruit and mix in well to combine
- Add the rice bubbles and cacao nibs and gently mix together
- Press the mixture firmly and evenly into the pan
- Bake for around 30 minutes or until the edges are golden brown
- Drizzle some melted chocolate over the slice once out of the oven if you like
- Cool completely before removing from the pan and cutting into bar or slices
